At the heart of this caramel is Nolen Gur — a winter-harvest jaggery from Bengal, prized for its deep, smoky, almost floral flavour, ethically sourced by Earth Story Farms. Unlike refined sugar, Nolen Gur brings warmth and complexity, with notes of molasses and earthiness that evolve as you taste.

At Pass Me Summore, we paired it with coconut milk instead of dairy cream, giving the caramel a lighter mouthfeel and a subtle nuttiness. The result is a caramel that is rich yet balanced — indulgent without being overpowering, and naturally dairy-free.
